Left to our own devices growing up, our food world was constructed around whatever was fast and easy. In our homes this came in the form of instant noodles, whether it be in textbook form; ‘fancy instant,’ topped with a slice of cheese or, if we were feeling especially indulgent, fried eggs and Spam, usually eaten in front of the TV. Later, as adults, our time was spent across Tokyo, Taipei, Bangkok, Hong Kong and Saigon, where we lived, worked and fell hard for the humble street noodle—held up on a pedestal by the folding metal table and plastic stool, sometimes a crate. If we found ourselves squatting, we knew we were somewhere really good.

Years later, we returned to an America that was lacking Asian options when it came to good, wholesome and super convenient foods. The supermarket shelf seemed stuck in time, circa 1990. Instant noodles were still as unhealthy as they are tasty. More disappointing was the frozen Asian section, stacked mostly with products bland in both flavor and in many cases, entirely misappropriated.

So we created Chop Chop, an uncompromising pursuit of quality, integrity and originality. It’s our take on the iconic street noodle—wholesome, convenient and proudly Asian American.
